Sometimes I find myself suddenly hosting something at the last minute and I don’t have time to run to the store to grab supplies. Here is a simple dip recipe that I usually have the ingredients for in the house. I also try to keep a bag of tortilla chips on hand at all times for emergencies like this. I make this dip, open a bag of chips, and voila! a quick appetizer/snack for my guests!
Cup’a Cup’a Onion Dip
1 cup shredded Mozzarella or Swiss cheese
1 cup Mayo (any kind, light and fat free works too)
1 cup diced onions (can substitute spinach, artichokes, you pick)
Mix ingredients, pour into a greased decorative pie plate and bake for 30 min. at 350 degrees.
